Pumpkin Roll
Ingredients
- 3 eggs
- 1 c sugar
- 2/3 c pumpkin
- 3/4 c flour
- 1/2 t cinnamon
- 1 t baking soda
- 1 c powdered sugar
- 3/4 t vanilla
- 2 T butter
- 8 oz cream cheese
Directions
- Preheat over to 350 degrees
- Grease baking sheet and line with parchment paper (grease and flour parchment paper)
- Beat eggs on high for 5 minutes
- Gradually add sugar and pumpkin
- Add flour, cinnamon, and soda
- Spread batter evenly in pan
- Bake for 15 minutes; immediately turn onto linen towel dusted with powdered sugar, peel off paper and roll cake up in towel; let cool
- Make filling; cream powdered sugar, vanilla, butter and cream cheese
- Unroll cake, spread filling on cake and roll back up; dust with more powdered sugar
