Pumpkin Roll

Ingredients

  • 3 eggs
  • 1 c sugar
  • 2/3 c pumpkin
  • 3/4 c flour
  • 1/2 t cinnamon
  • 1 t baking soda
  • 1 c powdered sugar
  • 3/4 t vanilla
  • 2 T butter
  • 8 oz cream cheese
Directions
  • Preheat over to 350 degrees
  • Grease baking sheet and line with parchment paper (grease and flour parchment paper)
  • Beat eggs on high for 5 minutes
  • Gradually add sugar and pumpkin
  • Add flour, cinnamon, and soda
  • Spread batter evenly in pan
  • Bake for 15 minutes; immediately turn onto linen towel dusted with powdered sugar, peel off paper and roll cake up in towel; let cool
  • Make filling; cream powdered sugar, vanilla, butter and cream cheese
  • Unroll cake, spread filling on cake and roll back up; dust with more powdered sugar
