Pumpkin Cheesecake Baked Oatmeal

Ingredients
- 3 1/2 cups quick oats
- 1 cup brown sugar
- 1 teaspoon baking powder
- 2 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 2 large egg, lightly beaten
- 1 can pumpkin puree
- 1.5 cup milk, (any variety works)
- 1/2 cup canola oil (or melted butter or coconut oil)
- 1 tablepoon vanilla extract
- 8 ounces cream cheese
- dollop of honey and syrup
Directions
- Preheat the oven to 350 degrees F. Spray a 9x13 inch baking dish with nonstick spray
- Blend up 2 cups of oats in blender
- In a large bowl, whisk together the oats (blended and whole), sugar, baking powder, pumpkin spice and salt. In a smaller bowl, whisk together the eggs, pumpkin, milk, oil and vanilla extract. Add the wet ingredients to the dry and stir until combined. Pour the mixture in the dish.
- In a small bowl, stir together the cream cheese and honey/syrup until combined. Dollop the cheese all over the top of the oatmeal. Use a spatula to gently press it in and swirl it around a bit.
- Bake for 35 minutes
