Pumpkin Cheesecake Baked Oatmeal

Ingredients

  • 3 1/2 cups quick oats
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 2 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 2 large egg, lightly beaten
  • 1 can pumpkin puree
  • 1.5 cup milk, (any variety works)
  • 1/2 cup canola oil (or melted butter or coconut oil)
  • 1 tablepoon vanilla extract
  • 8 ounces cream cheese
  • dollop of honey and syrup

Directions

  • Preheat the oven to 350 degrees F. Spray a 9x13 inch baking dish with nonstick spray
  • Blend up 2 cups of oats in blender
  • In a large bowl, whisk together the oats (blended and whole), sugar, baking powder, pumpkin spice and salt. In a smaller bowl, whisk together the eggs, pumpkin, milk, oil and vanilla extract. Add the wet ingredients to the dry and stir until combined. Pour the mixture in the dish.
  • In a small bowl, stir together the cream cheese and honey/syrup until combined. Dollop the cheese all over the top of the oatmeal. Use a spatula to gently press it in and swirl it around a bit.
  • Bake for 35 minutes
