Creamy Veggie Gnocchi Soup

 Ingredients

  • 1.5 lb of shredded chicken
  • 4-6 c of chicken broth
  • olive oil
  • 3/4 c onion
  • 3/4 c celery
  • 1 1/4 c carrots
  • 3 cloves of garlic
  • 1 brick of cream cheese
  • 1 1/2 c cheddar cheese
  • 1/2 c heavy cream
  • chopped spinach
  • packet of gnocchi (cut)
Directions
  • Saute olive oil with onion, celery, carrots and garlic, until soft
  • Mix in cream cheese until melted
  • Mix in shredded chicken to warm
  • Add cream and then broth
  • Bring to a boil and then cover at a simmer for 15 minutes
  • Mix in cheddar cheese
  • Add chopped spinach (amount to your liking)
  • 10 minutes before serving, add in gnocchi to cook
