Creamy Veggie Gnocchi Soup
Ingredients
- 1.5 lb of shredded chicken
- 4-6 c of chicken broth
- olive oil
- 3/4 c onion
- 3/4 c celery
- 1 1/4 c carrots
- 3 cloves of garlic
- 1 brick of cream cheese
- 1 1/2 c cheddar cheese
- 1/2 c heavy cream
- chopped spinach
- packet of gnocchi (cut)
Directions
- Saute olive oil with onion, celery, carrots and garlic, until soft
- Mix in cream cheese until melted
- Mix in shredded chicken to warm
- Add cream and then broth
- Bring to a boil and then cover at a simmer for 15 minutes
- Mix in cheddar cheese
- Add chopped spinach (amount to your liking)
- 10 minutes before serving, add in gnocchi to cook
