Taco Cornbread Casserole

Ingredients
- 1 lb of ground turkey
- 1 cup of diced onion
- 1 packet of Taco seasoning (I use the less sodium one)
- 1 can of black beans, rinsed and drained
- 1 can of corn, rinsed and drained
- 1 cup of your favorite Salsa (I use fresh salsa from the refrigerated section)
- Shredded Cheese
- 1 box of Jiffy Corn Muffin mix (plus the ingredients needed to for the mix which is 1/3 cup milk and 1 egg)
Directions
- Cook turkey with taco seasoning and onions; drain
- Mix in beans, corn and salsa
- Separately mix together cornbread (mix, milk and egg)
- Layer in 8x8 pan, cornbread and then turkey mixture
- Cook covered with foil at 400°F for 20 mins
- Add cheese on top and cook uncovered for 10 mins
Note: Double recipe for 9x13 pan
