Banana Nut Pound Cake

Ingredients

  • 1 1/2 c oil
  • 2 c sugar
  • 3 eggs
  • 3 c flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 c mashed bananas (about 5)
  • 1 tbsp vanilla
  • 1/2 c buttermilk
  • 1/2 c chopped pecans
  • 1/2 c coconut
  • 1/2 c powder sugar
  • 2 tbsp milk
  • splash of vanilla
  • 3/4 c chocolate chips
  • 3 tbsp butter
  • 1 tbsp light corn syrup 
  • 1/4 tsp vanilla
Directions
  • heat oven to 325⁰
  • combine flour, baking soda, and salt; set aside
  • mix sugar and oil together
  • add eggs one at a time, mixing well
  • stir in bananas
  • add flour and buttermilk; alternating, starting and ending with flour
  • stir in vanilla, nuts, and coconut
  • pour into sprayed tube pan
  • bake for 70-80 mins
  • cool on rack for 10-15 mins before removing from pay
  • mix glaze of powdered sugar, milk, and splash of vanilla; pour over cake
  • while cake cools, in double boiler melt chocolate chips, butter, corn syrup, and vanilla; pour over cake
