Banana Nut Pound Cake
Ingredients
- 1 1/2 c oil
- 2 c sugar
- 3 eggs
- 3 c flour
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 c mashed bananas (about 5)
- 1 tbsp vanilla
- 1/2 c buttermilk
- 1/2 c chopped pecans
- 1/2 c coconut
- 1/2 c powder sugar
- 2 tbsp milk
- splash of vanilla
- 3/4 c chocolate chips
- 3 tbsp butter
- 1 tbsp light corn syrup
- 1/4 tsp vanilla
Directions
- heat oven to 325⁰
- combine flour, baking soda, and salt; set aside
- mix sugar and oil together
- add eggs one at a time, mixing well
- stir in bananas
- add flour and buttermilk; alternating, starting and ending with flour
- stir in vanilla, nuts, and coconut
- pour into sprayed tube pan
- bake for 70-80 mins
- cool on rack for 10-15 mins before removing from pay
- mix glaze of powdered sugar, milk, and splash of vanilla; pour over cake
- while cake cools, in double boiler melt chocolate chips, butter, corn syrup, and vanilla; pour over cake
