Cranberry Key Lime Pie

Ingredients

  • 6 oz fresh or frozen cranberries (1.5 cups)
  • 1/2 c of sugar
  • 1 can (14oz) sweetened condensed milk
  • 4 large egg yolks
  • 6 T lime juice
  • 1 ready to use graham cracker piecrust
  • 1 c heavy whipping cream
  • 1/4 c powdered sugar
  • 1 t vanilla
Directions
  • Preheat over to 350
  • Bring cranberries, sugar, and 1/4 c water to a boil over medium high heat; stirring often, let cranberries burst and thicken (6-8 minutes)
  • Transfer cranberries to blender and blend until smooth (leave lid open to allow steam to release)
  • Add milk, yolks, lime juice and blend
  • Pour into prepared crust
  • Back for 15 minutes, let cool on rack for 1 hr; cover and chill
  • Beat cream, powdered sugar and vanilla to make whip cream, top pie and serve
