Dale's Stuffed Jalapeños

Ingredients
  • 20 jalapeños
  • 6 oz tomato paste (you will only need 1/3 c)
  • 1 lb breakfast sausage
  • 1/2 c water
  • 2 tsp chili powder
  • 8 oz shredded cheddar cheese
Directions
  • In skillet, brown sausage.  Drain fat
  • Stir in water, 1/3 c tomato paste and chili powder; simmer 2 minutes or until thickens
  • Stir in 1/2 c cheese
  • Halve jalapeños and remove insides
  • Spoon 1 Tbsp of sausage mixture into each halved jalapeños
  • Grill peppers over medium heat 9-12 minutes (until peppers are tender)
  • Serve with a sprinkling of remaining cheese
