Dale's Stuffed Jalapeños
Ingredients
- 20 jalapeños
- 6 oz tomato paste (you will only need 1/3 c)
- 1 lb breakfast sausage
- 1/2 c water
- 2 tsp chili powder
- 8 oz shredded cheddar cheese
Directions
- In skillet, brown sausage. Drain fat
- Stir in water, 1/3 c tomato paste and chili powder; simmer 2 minutes or until thickens
- Stir in 1/2 c cheese
- Halve jalapeños and remove insides
- Spoon 1 Tbsp of sausage mixture into each halved jalapeños
- Grill peppers over medium heat 9-12 minutes (until peppers are tender)
- Serve with a sprinkling of remaining cheese
